Mini Meatloaves

I love meatloaf and when I found out you could put them in muffin tins I loved it more !! I made these up so the measurements are just how much I think should go in my meatloaf... so it is up to you :)
Ingredients
- 1 pound lean ground beef shopping list
- couple of shakes of seasoning salt shopping list
- salt and pepper to taste shopping list
- couple of shakes of mince onion ( or 1/2 an onion chopped fine) shopping list
- 1 red pepper finely chopped shopping list
- box of your favorite stuffing mix shopping list
- ketchup shopping list
How to make it
- preheat oven to 350
- In a large bowl add your beef, seasonings, and red pepper. mix well
- in a small bowl put the stuffing mix in and add abut 3-4 tbsp of water. Just enough to moisten it. mix well.
- add to beef mixture
- spoon equal amounts of beef mixture into your 6 greased muffin tins ( this also coud change depending on how big or small you would like them)
- bake for 20 minutes
- take out of oven and spread some Ketchup on top of each mini loaf
- put back in oven and bake another 20 minutes until cooked through. Times will vary depending on your oven...
