Chicken Roullade Recipe
This an elegant but simple way to serve yardbird. Goes well with rice, pasta or potatoes. Substitute other ingredients--broccoli and ham, onions, garlic and bacon, etc.

Ingredients
  • boneless skinless chicken breasts -4
  • spinach- fresh or frozen
  • feta cheese 4 oz
  • sundried tomatoes -dried variety, julienned

Directions
  1. Place each peiece of chicken between two sheets of parchment paper and pound thin.
  2. For each breast, layer spinach, tomatoes and feta cheese.
  3. Roll-up each chicken breast to make a cigar-shaped breast.
  4. Place each piece in a baking dish, tightly against eachother.
  5. Bake at 350 for 45 minutes.
  6. Remove chicken from pan one at a time and slice at an angle, creating cross-section coins of the chicken. Slice 3/4" thick.
  7. Lay one "coin" on the plate flate and lean 4 more coins per plate aginst the first.
  8. Top with white wine veloutte (wine tinged white sauce).
