Chicken Roullade

- boneless skinless chicken breasts -4 shopping list
- spinach- fresh or frozen shopping list
- feta cheese 4 oz shopping list
- sundried tomatoes -dried variety, julienned shopping list
How to make it
- Place each peiece of chicken between two sheets of parchment paper and pound thin.
- For each breast, layer spinach, tomatoes and feta cheese.
- Roll-up each chicken breast to make a cigar-shaped breast.
- Place each piece in a baking dish, tightly against eachother.
- Bake at 350 for 45 minutes.
- Remove chicken from pan one at a time and slice at an angle, creating cross-section coins of the chicken. Slice 3/4" thick.
- Lay one "coin" on the plate flate and lean 4 more coins per plate aginst the first.
- Top with white wine veloutte (wine tinged white sauce).
