Chilled Poached Boysenberries With Marscarpone Cream

- 1/2 cup water shopping list
- 1/2 cup sweet white dessert-style wine shopping list
- 1/2 cup sugar shopping list
- 1 vanilla pod, split (optional) shopping list
- 3 punnets boysenberries hulled (or 500 grams frozen) shopping list
- Marscarpone Cream shopping list
- 1 cup mascarpone shopping list
- 1 cup cream, lightly whipped shopping list
How to make it
- Method
- 1. Put the water, wine, sugar and vanilla pod into a saucepan and simmer together for about 3 minutes, stirring until the sugar has dissolved.
- 2. Bring to the boil and add the boysenberries. Turn off the heat and set aside. When cool transfer to a large glass dish and remove the vanilla pod. Serve with the Mascarpone Cream.
- Marscapone Cream
- 1. Fold the mascarpone into the whipped cream; sweeten if wished.
