Chilled Poached Boysenberries With Marscarpone Cream Recipe
I think this desert speaks for itself, it really is as good as it sounds, love making it in the summer...

Ingredients
  • 1/2 cup water
  • 1/2 cup sweet white dessert-style wine
  • 1/2 cup sugar
  • 1 vanilla pod, split (optional)
  • 3 punnets boysenberries hulled (or 500 grams frozen)
  • Marscarpone Cream
  • 1 cup mascarpone
  • 1 cup cream, lightly whipped

Directions
  1. Method
  2. 1. Put the water, wine, sugar and vanilla pod into a saucepan and simmer together for about 3 minutes, stirring until the sugar has dissolved.
  3. 2. Bring to the boil and add the boysenberries. Turn off the heat and set aside. When cool transfer to a large glass dish and remove the vanilla pod. Serve with the Mascarpone Cream.
  4. Marscapone Cream
  5. 1. Fold the mascarpone into the whipped cream; sweeten if wished.
