  • 1. Put the water, wine, sugar and vanilla pod into a saucepan and simmer together for about 3 minutes, stirring until the sugar has dissolved.
  • 2. Bring to the boil and add the boysenberries. Turn off the heat and set aside. When cool transfer to a large glass dish and remove the vanilla pod. Serve with the Mascarpone Cream.
  • Marscapone Cream
  • 1. Fold the mascarpone into the whipped cream; sweeten if wished.
