This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bateman Estate in Wills Point, Texas in 1985. These are tried and true and loved by everyone who has ever tasted them.

Ingredients
  • 2 eggs beaten
  • 1-1/2 cups milk
  • 3/4 cup vegetable shortening melted
  • 2 tablespoons bell pepper chopped
  • 2 tablespoons onion chopped
  • 2 tablespoons pimiento chopped
  • 3/4 cup American cheese grated
  • 3/4 cup cheddar cheese grated
  • 2-1/2 cups all purpose flour
  • 1 teaspoon salt
  • 2 tablespoons baking powder
  • 2 tablespoons sugar
  • 2 tablespoons cornmeal

Directions
  1. Mix eggs, milk and shortening. In another bowl combine remaining ingredients.
  2. Add milk mixture and stir just to mix.
  3. Pour into greased muffin cups and bake at 400 oven 25 minutes.
