This duck dish only requires attention once an hour to flip it over and prick the skin a few times.

Being a great lover of Peking Duck I have found that putting a teaspoon of mild (chopped chilies in soy sauce) inside the pancake with an extra teaspoon of HOI SIN sauce makes the duck a sensation that is hard to be rivalled. The chili does not need to be a hot one but that then is by one's own taste. I enjoy mine a little hot but the chili is there more for the flavour rather that the heat.

In the entry I did mention that it was cooking the whole time at 300F, but I should have put it in a more obvious spot.
