How to make it

  • (if using fresh pumpkin) boil cut-up pumpkin on the stove until soft
  • in another large pot, add chicken stock and all other ingredients except for flour and milk - bring to slow boil, then simmer
  • once pumpkin is cooked, scrape off the skin and mix with mixer until smooth, then add 3 cups of it to the stock mixture
  • add flour to the milk in a small bowl and mix with mixer until foamy, add to soup
  • bring to a slight boil for thickening, then to low for about 10 minutes before serving
  • garnish with sour cream and chives if desired
