Yummy Pumpkin Soup Recipe
I had the hardest time finding a good recipe for pumpkin soup that wasn't using crazy spices that I knew my family wouldn't like. I came up with this recipe after trial and error. It was a hit with hubby and kids!

Ingredients
  • 3 cups of fresh or canned pumpkin
  • 6 c. of canned chicken stock (or) 6 c. water and 4 cubes of bouillon
  • 1 large chopped onion
  • 1/2 tsp. thyme
  • 1 tsp. parsley
  • 1 tsp. salt
  • 1/8 to 1/4 tsp. pepper (depending how spicy you like it)
  • 3 sticks celery, chopped
  • 3 large cloves garlic, using a garlic press
  • 2 T. flour
  • 2 c. milk

Directions
  1. (if using fresh pumpkin) boil cut-up pumpkin on the stove until soft
  2. in another large pot, add chicken stock and all other ingredients except for flour and milk - bring to slow boil, then simmer
  3. once pumpkin is cooked, scrape off the skin and mix with mixer until smooth, then add 3 cups of it to the stock mixture
  4. add flour to the milk in a small bowl and mix with mixer until foamy, add to soup
  5. bring to a slight boil for thickening, then to low for about 10 minutes before serving
  6. garnish with sour cream and chives if desired
