Yummy Pumpkin Soup

- 3 cups of fresh or canned pumpkin shopping list
- 6 c. of canned chicken stock (or) 6 c. water and 4 cubes of bouillon shopping list
- 1 large chopped onion shopping list
- 1/2 tsp. thyme shopping list
- 1 tsp. parsley shopping list
- 1 tsp. salt shopping list
- 1/8 to 1/4 tsp. pepper (depending how spicy you like it) shopping list
- 3 sticks celery, chopped shopping list
- 3 large cloves garlic, using a garlic press shopping list
- 2 T. flour shopping list
- 2 c. milk shopping list
How to make it
- (if using fresh pumpkin) boil cut-up pumpkin on the stove until soft
- in another large pot, add chicken stock and all other ingredients except for flour and milk - bring to slow boil, then simmer
- once pumpkin is cooked, scrape off the skin and mix with mixer until smooth, then add 3 cups of it to the stock mixture
- add flour to the milk in a small bowl and mix with mixer until foamy, add to soup
- bring to a slight boil for thickening, then to low for about 10 minutes before serving
- garnish with sour cream and chives if desired
