- 2 Mahi Mahi filets shopping list
- 1 Avacado shopping list
- cilantro shopping list
- 1-2 limes shopping list
- 2 roma tomatos shopping list
- 4oz tequila shopping list
- salt shopping list
- pepper shopping list
- oil shopping list
- herb butter shopping list
How to make it
- for salsa chop avacado, tomato and cilantro corsely, combine and toss with lime juice, salt and pepper to taste then sit in fridge
- preheat oven to 350
- heat 3 tablespoons olive oil in oven safe pan until the oil is almost smoking
- pat mahi filets dry
- coat both sides with herb butter (or use herb infused olive oil)
- place filets in pan sear filets on each side until carmelized, about 1-2 minutes
- once sides are carmelized place pan in oven for 4 minutes
- remove from oven, plate fish, deglaze pan with tequila, a teaspoon of herb butter, and a squeeze of lime juice
- top with salsa and serve

Very nice. Love the addition of the tequila. I used cilantro and parsley mix in my herb butter.

WONDERFUL!!!! Even my husband loved it. Only one suggestion...if an "herb butter" recipe were included it would make it handier!
