Ingredients
  • 2 Mahi Mahi filets
  • 1 Avacado
  • Cilantro
  • 1-2 limes
  • 2 roma tomatos
  • 4oz tequila
  • salt
  • pepper
  • oil
  • herb butter

Directions
  1. for salsa chop avacado, tomato and cilantro corsely, combine and toss with lime juice, salt and pepper to taste then sit in fridge
  2. preheat oven to 350
  3. heat 3 tablespoons olive oil in oven safe pan until the oil is almost smoking
  4. pat mahi filets dry
  5. coat both sides with herb butter (or use herb infused olive oil)
  6. place filets in pan sear filets on each side until carmelized, about 1-2 minutes
  7. once sides are carmelized place pan in oven for 4 minutes
  8. remove from oven, plate fish, deglaze pan with tequila, a teaspoon of herb butter, and a squeeze of lime juice
  9. top with salsa and serve

WONDERFUL!!!! Even my husband loved it. Only one suggestion...if an "herb butter" recipe were included it would make it handier!


Very nice. Love the addition of the tequila. I used cilantro and parsley mix in my herb butter.
