How to make it

  • On medium-high heat in a large skillet pour in olive oil and garlic powder. Once olive oil starts to sizzle put in chicken breast. Cook for about 5-7 minutes (until sides have started to brown).
  • Add in the rest of the ingredients and bring to low heat.
  • Cover skillet and let simmer for about 15 minutes. Stir occasionally.
  • Ready to serve. You can garnish with a little scoop of sour cream or some shredded cheddar cheee. I usually eat it as is with a whole wheat tortilla or whole grain tortilla chips.
