Chicken Chili Recipe
Simple one skillet chili that cooks in about 20 minutes

Ingredients
  • 2 tbsp. olive oil
  • 1/2 tbsp. garlic powder
  • 2 boneless skinless chicken breasts, cubed
  • 1 small tomato, diced
  • 1 small onion diced
  • 1/4 cup chopped cilantro, or as much to your liking
  • 1 14 oz. can diced tomatoes
  • 1 6-8 oz. can of tomato sauce
  • 1 can of black beans
  • 1 can of garbanzo beans
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1 tsp. cinnamon
  • chili powder to your liking

Directions
  1. On medium-high heat in a large skillet pour in olive oil and garlic powder. Once olive oil starts to sizzle put in chicken breast. Cook for about 5-7 minutes (until sides have started to brown).
  2. Add in the rest of the ingredients and bring to low heat.
  3. Cover skillet and let simmer for about 15 minutes. Stir occasionally.
  4. Ready to serve. You can garnish with a little scoop of sour cream or some shredded cheddar cheee. I usually eat it as is with a whole wheat tortilla or whole grain tortilla chips.
