Ingredients
  • English cucumber
  • cups natural yogurt,
  • 1 teaspoon minced garlic,
  • 1 tablespoon chopped dill,
  • 1 tablespoon sunflower oil,
  • finely chopped walnuts (optional) but great
  • 2 cups cold water
  • kosher or grey salt
  • freshly ground black pepper to taste.
  • Fresh chopped chives make a nice topping and this is a great opening act for a heavy meal.

Directions
  1. Grate the cucumber and put it in a bowl.
  2. Whisk all the remaining ingredients together in the bowl with the grated cucumber.
  3. Let the soup sit in a refrigerator for 20-30 minutes covered,.and serve
