Spaghetti Squash Latkes

- 4 cups spaghetti squash shopping list
- 1 large onion, chopped shopping list
- 1 1/2 tsp. salt shopping list
- 2 tbsp. flour shopping list
- 2 eggs shopping list
- black pepper to taste shopping list
- canola oil for frying shopping list
How to make it
- Prepare Spaghetti Squash by cutting it in half length wise, scooping out seeds, placing it cut side down on a cookie sheet and baking in oven at 350F for about 25 minutes. Take out of oven and allow to cool down. Once cooled, use a fork to scrap out from skin.
- In a mixing bowl, add all ingredients except for the oil. Mix well.
- In a frying pan, add enough oil to cover bottom of pan with some excess (about an 1/4 inch deep).
- Once oil is ready for frying, spoon out about a quarter cup of the mixture into the frying pan.
- Fry for about two minutes, then turn the latke to the other side and allow to cook for another two minutes.
- Latke should be golden brown on both sides.
- Drain excess oil on paper towel then serve.
- They can be served with a marinara sauce, sour cream or plain yogurt.
