Chicken And Potato Curry Recipe
Found this in a magazine a while ago. Easy to adapt to your own personal taste.

Ingredients
  • 2 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves
  • 1lb 2oz/500g potatoes, peeled and cut into chunks
  • 1 tsp ground cumin
  • 1/4 tsp cayenne
  • 1/2 tsp paprika
  • 1 tsp ground coriander
  • 1tsp garam masala
  • 400ml/14fl oz hot chicken stock
  • 2 tbsp creamed coconut
  • 4 tbsp greek yoghurt
  • 4 chicken breats, cut into pieces
  • 200g bag baby spinach
  • Boiled rice to serve
  • Coriander leaves for garnish

Directions
  1. Heat the oil in a large pan and fry the onion and garlic for 5 mins or until soft.
  2. Add the potatoes and spices to the pan and cook for another few minutes to release the flavours.
  3. Add the hot stock and bring to the boil.
  4. Simmer for 10 mins.
  5. Add creamed coconut, yoghurt and chicken and simmer for a further 10 minutes, or until the meat is cooked through.
  6. Stir in the baby spinach.
  7. Garnish with some coriander leaves and serve with the boiled rice
