How to make it

  • Heat the oil in a large pan and fry the onion and garlic for 5 mins or until soft.
  • Add the potatoes and spices to the pan and cook for another few minutes to release the flavours.
  • Add the hot stock and bring to the boil.
  • Simmer for 10 mins.
  • Add creamed coconut, yoghurt and chicken and simmer for a further 10 minutes, or until the meat is cooked through.
  • Stir in the baby spinach.
  • Garnish with some coriander leaves and serve with the boiled rice
