Chicken and Potato Curry

- 2 tbsp oil shopping list
- 1 onion, chopped shopping list
- 2 garlic cloves shopping list
- 1lb 2oz/500g potatoes, peeled and cut into chunks shopping list
- 1 tsp ground cumin shopping list
- 1/4 tsp cayenne shopping list
- 1/2 tsp paprika shopping list
- 1 tsp ground coriander shopping list
- 1tsp garam masala shopping list
- 400ml/14fl oz hot chicken stock shopping list
- 2 tbsp creamed coconut shopping list
- 4 tbsp greek yoghurt shopping list
- 4 chicken breats, cut into pieces shopping list
- 200g bag baby spinach shopping list
- Boiled rice to serve shopping list
- coriander leaves for garnish shopping list
How to make it
- Heat the oil in a large pan and fry the onion and garlic for 5 mins or until soft.
- Add the potatoes and spices to the pan and cook for another few minutes to release the flavours.
- Add the hot stock and bring to the boil.
- Simmer for 10 mins.
- Add creamed coconut, yoghurt and chicken and simmer for a further 10 minutes, or until the meat is cooked through.
- Stir in the baby spinach.
- Garnish with some coriander leaves and serve with the boiled rice
