How to make it

  • To make this cake look as beautiful as possible, there a few things I'd like to mention. Choose strawberrys with color showing to the top of the berry. You will be dipping them in chocolate and they are much prettier if you have a nice red color near the top of the leaves.
  • Tall cake pans produce thicker layer cakes but if all you have is shallow pans, this is ok.
  • The first thing to do is to wash your strawberrys and set them aside on a paper towel to dry. (DRY strawberrys are VERY important.)
  • Nest..I take the pans and the parchment paper and trace a circle of parchemnt for each pan.
  • Next is to take a small glob of the shortning and apply to one side of each circle of the parchment ans set aside. Now grease each pan and then flour. Put the parchment cirlce in the bottom of the pan and re flour. (this insures that none of the cake will stick to the pan)
  • Nest.. prepair the chocolate cake as directed on the mix. you will need to make 3 pans of cake with shallow pans
  • OR
  • 2 pans of cake with pans that have tall sides.
  • Bake as directed. De pan the cakes as soon as possible when baking is done. Let cool COMPLETLY
  • Take a large knife and cut each cake in half. It is MUCH easier the cake is cold. ( I personally put my cake in the freezer for about 20 minuts)
  • Next is to make a baggie of chocolate frosting. Fill about 1/2 full. seal and cut a small corner out of the bag AFTER it is filled. Next I take put the first layer on the board and apply a continious strip of chocolate frosting around the outside edge of the cake layer. Now fill the inside area with the jam. Put on the next layer of cake and do the same thing with the frosting and then the jam filling. Continue doing this untill all the layers are on the cake. Frost the cake completly. How you apply the chocolate is your choice..just so its frosted.
  • Now you need to melt the Girdelli chocolate. I take the chocolate and break apart in a small glass bowl and melt in for 45 second increments in the microwave. I stir between each melt.
  • After ALL the globs of chocolate have melted, I pour 1/2 of the chocolate on top of the cake. Make sure it completly covers the top of the cake. Set aside.
  • The strawberrys should be dry by now. I next dip each one and set aside. If in a hurry, you can put them in the freezer for about 3 minuts.
  • To apply each strawberry, I take the baggie of chocolate and make a small swirled bed of chocolate for each strawberry to sit on. I do this for about 5-8 strawberrys. There should be some strawberrys left over and I now eat them or give to anyone watching. (A nice little treat for the kiddies watching)
