Mini Meatloaf

- 750 g lean minced meat (can be beef or lamb) shopping list
- 250 g sausage meat shopping list
- 1 cup fresh breadcrumbs shopping list
- 1/2 teaspoon salt & 1/4 teaspoon pepper shopping list
- 1 cup spicy pasta sauce or tomato sauce shopping list
How to make it
- Preheat oven to 180°C. Spray a tray of 12 muffin tins with non stick baking spray.
- Wear plastic disposable gloves and use your hands to mix all the ingredients together. Divide the mixture into 12 portions and press into the prepared muffin tins.
- Bake for 35 – 40 minutes until nice and brown on top. Cool in the tins for 5 minutes then carefully lift out and serve with extra pasta or tomato sauce. These are great served in a bread roll or hamburger bun with salad and cheese slices.
- Note: To make 1 cup of fresh breadcrumbs, whiz up 2 slices of toast thickness fresh bread in a food processor. Bread crumbs can be frozen in small ziplock plastic bags and used from frozen. This a a good way of using up stale bread.
