Ingredients
  • 2 Eggs
  • 3/4 cup Caster Sugar
  • 200 grams Butter
  • 1 cup Self Raising Flour
  • 1/2 cup Homogenised Milk
  • 2 tbsp Custard Powder
  • 1 cup Sliced Peaches, drained
  • 1/2 cup Pure Plain Flour
  • 1/2 cup Raw Sugar
  • 1/4 cup Desiccated Coconut

Directions
  1. Preheat the oven to 180°C.
  2. Put the eggs and sugar into a food processor and process for 2 minutes or until light. Add 125 g of the butter and process until light and creamy, about another 2 minutes. Add the self raising flour, custard powder and milk and pulse until just combined. Do not over process.
  3. Turn the mixture into a well greased, floured and lined 20 cm loose bottomed cake tin. Arrange the peaches on the top of the batter. Mix the standard flour, sugar, and coconut together. Rub in the remaining butter until the mixture resembles fine crumbs. Sprinkle over the top.
  4. Bake in the preheated oven for about 1 hour or until a skewer inserted comes out clean. Stand in the tin for 10 minutes before turning out onto a cake rack to cool. Store in an airtight container.
