Jumbo Pancake Roll Recipe
This recipe comes from a very old estate. All of this recipes in this state are at least 50 years old and many go back to the 1800's. Will be posting several from this estate since I finally got them all typed up. Enjoy

Ingredients
  • 2 eggs beaten
  • 3 cups sour milk
  • 2 tablespoons melted shortening or salad oil
  • 3 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • Orange juice
  • Sugar

Directions
  1. Combine eggs, milk and shortening.
  2. Add sifted dry ingredients and beat until smooth.
  3. Make pancake full griddle size by pouring and tipping to spread batter and make cake round.
  4. Bake until brown on bottom and top surface is bubbly.
  5. Do not turn.
  6. Slip under broiler a second or two to dry.
  7. Sprinkle lightly with orange juice and sugar.
  8. Roll 1 cake jellyroll fashion using 2 forms then bake a second cake and roll around the first.
  9. Sprinkle with grated orange peel and sugar.
  10. Garnish with orange sections.
