Codfish Roe With Lemon Sauce Recipe
This recipe comes from the Crawford Estate in Quinlan, Texas. I obtained it in 1982 but the recipes in it are all a minimum of 50 years old and in some case they date back to World War II and days of rationing. Enjoy

Ingredients
  • 1/4 cup plus 2 tablespoons butter or margarine
  • 1 tablespoons minced parsley
  • 1 tablespoon lemon juice
  • Dash of cayenne pepper
  • 8 ounce can codfish roe
  • Parsley

Directions
  1. Combine 1/4 cup butter with minced parsley, lemon juice and cayenne pepper.
  2. Beat with electric beater until creamy and thoroughly combined.
  3. Drain codfish roe well.
  4. Sauté in remaining 2 tablespoons butter over very low heat until heated through.
  5. Serve with lemon butter sauce and garnish with parsley.
