How to make it

  • Sift flour 3 time into bowl
  • Combine egg yolks and water in large bowl over ice; beat with whisk until well blended. Gradually add flour, stirring and turning mixture from bottom with a spoon; do not overmix. Flour should be visible on the top or batter will become gummy. Keep batter over ice while dipping and frying.
  • Heat oil to 300 degrees in deep skillet
  • Remove ice cream ball from freezer; Immediately dip into batter. Drop into hot oil and fry until golden brown. Serve immediately, sprinkled with confectioners' sugar.
