Ingredients
  • 3/4 cup crushed vanilla wafers
  • 3 egg yolks, beaten
  • 1/4 cup lemon juice
  • 1 teaspoon grated lemon rind
  • 1/2 cup sugar
  • 1 1/2 cups plain yogurt
  • 3 egg whites, beaten until stiff

Directions
  1. Lightly butter a metal ice-cune tray; line tray with half of vanilla wafer crumbs. Combine egg yolk, lemon juice and rind, and sugar in top of double boiler. Heat over boiling water, stirring occasionally, until thick. Cool. Add yogurt and egg whites to cooled lemon mixture. Pour over wafer crumbs in the tray. Top with remaining crumbs. Cover and freeze until firm. the cut into squares to serve.
