Frozen Lemon Torte

- 3/4 cup crushed vanilla wafers shopping list
- 3 egg yolks, beaten shopping list
- 1/4 cup lemon juice shopping list
- 1 teaspoon grated lemon rind shopping list
- 1/2 cup sugar shopping list
- 1 1/2 cups plain yogurt shopping list
- 3 egg whites, beaten until stiff shopping list
How to make it
- Lightly butter a metal ice-cune tray; line tray with half of vanilla wafer crumbs. Combine egg yolk, lemon juice and rind, and sugar in top of double boiler. Heat over boiling water, stirring occasionally, until thick. Cool. Add yogurt and egg whites to cooled lemon mixture. Pour over wafer crumbs in the tray. Top with remaining crumbs. Cover and freeze until firm. the cut into squares to serve.
