Greek Bean Salad Recipe
Could be main course for a filling lunch or sides with picnic. Easy to throw together, keeps well for up to 5 days,no meat

Ingredients
  • 1 15oz can red kidney beans, drained and rinsed
  • 1 15oz can black beans,drained and rinsed
  • 1 15oz can garbanzo beans, drained and rinsed
  • 1 12oz jar marinated artichoke hearts, quartered
  • 1/4 cup, chopped Kalamata olives
  • 1/4 cup, crumbled Feta cheese
  • juice of one lemon
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon, dried oregano leaves

Directions
  1. Toss all ingredients together in large bowl.
  2. Serve immediately.
  3. Refrigerate leftovers up to one week.
