How to make it

  • Bring 1 can crushed pineapple and 1/2 cup sugar to boil, cook for 1 minute
  • Dissolve 1 envelope of unflavored gelatin in 1/4 cup of cold water. Add to the above
  • Add 1 tablespoon lemon juice, 1 tablespoon cherry juice, 8 oz softened cream cheese and 1/2 cup chopped cherries to all of the above
  • Let chill or cool (to desire)
  • Stir in 1 or 2 cups of cool whip and fold in
  • Add chopped pecans and coconut if desired
  • Chill until ready to serve
