How to make it

  • With a paring knife, pierce the pork all over; insert garlic slices into the gashes, then rub pork all over with lime juice
  • in a medium sized bowl, combine rum, maple syrup, and cayenne
  • add the pork, turn to coat
  • cover and refrigerate for at least 8 hours; turning the pork occasionally
  • preheat the oven to 425
  • lift the pork from marinade and place on a rack in a shallow roasting pan
  • roast, uncovered, basting often with marinade for 20 minutes
  • lower heat to 350 and roast another 20 minutes, basting often
  • let roast stand 10 minutes at room temperature before slicing
