Maple-glazed Pork Roast Recipe
This is a dish to prepare in the mornings so it has all day to marinade while your working. Its so simple to cook after a nice long day. Goes great with red potatoes and a salad.

Ingredients
  • 1 pound pork shoulder butt, boneless, lean, trimmed of any fat
  • 2 cloves garlic, thinly sliced
  • 2 tsp lime juice
  • 1 tbsp dark rum, or orange juice
  • 1 1/2 tbsp maple syrup
  • 1/8 tsp cayenne pepper
  • *Make sure you use real maple syrup and not maple-flavored syrup, for this and any other meal. The real stuff just tastes better. For instance Aunt Jamima is maple flavored syrup and not the real thing.

Directions
  1. With a paring knife, pierce the pork all over; insert garlic slices into the gashes, then rub pork all over with lime juice
  2. in a medium sized bowl, combine rum, maple syrup, and cayenne
  3. add the pork, turn to coat
  4. cover and refrigerate for at least 8 hours; turning the pork occasionally
  5. preheat the oven to 425
  6. lift the pork from marinade and place on a rack in a shallow roasting pan
  7. roast, uncovered, basting often with marinade for 20 minutes
  8. lower heat to 350 and roast another 20 minutes, basting often
  9. let roast stand 10 minutes at room temperature before slicing
