How to make it

  • Roast some cashew nuts in a moderate oven until they lightly browned. (Careful, they burn suddenly!)
  • Then add a similar amount of finely chopped spring onions.
  • Chop up a couple of seeded chillies (the tiny "birds-eye" ones - interestingly the Thais call these prik kee noo which means "mouse shit chilli").
  • Then sprinkle liberally with lime juice and salt to taste.
