Ingredients
  • ½ a 12-oz package firm silken tofu
  • 1 tbsp. vanilla extract
  • ½ cup unsalted butter
  • 1/3 cup sugar
  • ¼ cup brown sugar
  • 2 cups graham cracker crumbs
  • ½ cup flour
  • 2 ½ tsp. baking powder
  • ¾ cup skim milk
  • 2/3 cup mini marshmallows
  • ½ cup chocolate chunks
  • 1 7-oz jar marshmallow cream

Directions
  1. Preheat oven to 350˚F. Coat a 9” spring-form pan with pan spray and line with a circle of greased parchment.
  2. Puree tofu and vanilla until smooth and creamy
  3. Beat butter and sugars together until smooth and creamy.
  4. Add tofu puree and beat well.
  5. Separately, combine cracker crumbs, flour and baking powder, and add alternately with milk.
  6. Fold in marshmallows and chocolate.
  7. Bake 30-35 minutes, or until a pick inserted comes out clean. Cool completely in pan.
  8. Remove sides of pan.
  9. Frost with marshmallow cream, brown under the broiler 2 minutes.
