How to make it

  • Preheat oven to 350˚F. Coat a 9” spring-form pan with pan spray and line with a circle of greased parchment.
  • Puree tofu and vanilla until smooth and creamy
  • Beat butter and sugars together until smooth and creamy.
  • Add tofu puree and beat well.
  • Separately, combine cracker crumbs, flour and baking powder, and add alternately with milk.
  • Fold in marshmallows and chocolate.
  • Bake 30-35 minutes, or until a pick inserted comes out clean. Cool completely in pan.
  • Remove sides of pan.
  • Frost with marshmallow cream, brown under the broiler 2 minutes.
