Urban Camper Cake

- ½ a 12-oz package firm silken tofu shopping list
- 1 tbsp. vanilla extract shopping list
- ½ cup unsalted butter shopping list
- 1/3 cup sugar shopping list
- ¼ cup brown sugar shopping list
- 2 cups graham cracker crumbs shopping list
- ½ cup flour shopping list
- 2 ½ tsp. baking powder shopping list
- ¾ cup skim milk shopping list
- 2/3 cup mini marshmallows shopping list
- ½ cup chocolate chunks shopping list
- 1 7-oz jar marshmallow cream shopping list
How to make it
- Preheat oven to 350˚F. Coat a 9” spring-form pan with pan spray and line with a circle of greased parchment.
- Puree tofu and vanilla until smooth and creamy
- Beat butter and sugars together until smooth and creamy.
- Add tofu puree and beat well.
- Separately, combine cracker crumbs, flour and baking powder, and add alternately with milk.
- Fold in marshmallows and chocolate.
- Bake 30-35 minutes, or until a pick inserted comes out clean. Cool completely in pan.
- Remove sides of pan.
- Frost with marshmallow cream, brown under the broiler 2 minutes.
