Panzanella Recipe
Great main dish salad that only requires some chopping. I serve it with bread and some fruit for a side dish. I use all organic veggies/beans. Even the kids love it!

Ingredients
  • Sourdough bread, cut into cubes (about 2 cups)
  • 3 tbsp red wine vinegar
  • 1 1/2 tbsp. olive oil
  • 1-2 cloves garlic, crushed
  • salt and pepper to taste
  • 1 can garbanzo beans
  • 1 cucumber, seeded and chopped
  • 1/2 green or red pepper, chopped
  • 1/4 cup red onion, finely chopped
  • 2 c. cherry tomatoes, halved
  • 1/4 c. chopped fresh basil, or about 1 tbsp. dry
  • 4 oz. feta cheese crumbled

Directions
  1. Cut the bread into cubes, toast each side under the broiler to make croutons.
  2. Mix vinegar, oil, garlic, salt and pepper in large bowl.
  3. Add beans and all chopped vegetables.
  4. Stir in basil and feta.
  5. Add toasted sourdough and mix.
