Panzanella

- sourdough bread, cut into cubes (about 2 cups) shopping list
- 3 tbsp red wine vinegar shopping list
- 1 1/2 tbsp. olive oil shopping list
- 1-2 cloves garlic, crushed shopping list
- salt and pepper to taste shopping list
- 1 can garbanzo beans shopping list
- 1 cucumber, seeded and chopped shopping list
- 1/2 green or red pepper, chopped shopping list
- 1/4 cup red onion, finely chopped shopping list
- 2 c. cherry tomatoes, halved shopping list
- 1/4 c. chopped fresh basil, or about 1 tbsp. dry shopping list
- 4 oz. feta cheese crumbled shopping list
How to make it
- Cut the bread into cubes, toast each side under the broiler to make croutons.
- Mix vinegar, oil, garlic, salt and pepper in large bowl.
- Add beans and all chopped vegetables.
- Stir in basil and feta.
- Add toasted sourdough and mix.
