A nice change to ordinary potato salad

Ingredients
  • 1 1/2 kg chat potatoes
  • 5 green spring onions sliced thinly
  • salt and pepper to taste
  • extra green spring onoins to garnish
  • dressing]
  • 2 avocado, coarsly chopped
  • 1/2 cup whole egg mayonaise
  • 1 1/2 tblsps lemon juice
  • 1/4 cup sour cream
  • 35g packet spring vegetable soup mix

Directions
  1. boil, steam or microvave potatoes till tender.
  2. drain cool for 10 minutes
  3. cut potatoes into quarters place in large bowl
  4. to make advocado dressing place avocardos mayonaise, juice, garlic, sour cream and soup mix in a food processor.
  5. process untill smoth
  6. combine potatos spring onins season with salt and pepper with dressing
  7. serve salad garnished wit extra spring onions
