Spinach and Cheese Tortellni Soup

- 1 large can crushed tomatos shopping list
- 2 tablespoons olive oil shopping list
- 1 large onions,finely chopped shopping list
- 3 cloves garlic,minced shopping list
- 2 ounces pancetta,diced (Italian bacon) shopping list
- 9 cups chicken broth, canned shopping list
- 2 tablespoons ,mixed Italian herbs shopping list
- 1/2 pound spinach,washed and chopped shopping list
- 9 ounces cheese tortellini, fresh or frozen shopping list
- salt and pepper to taste shopping list
- Freshly grated parmesan cheese shopping list
How to make it
- Begin by heating the olive oil in a stock pot. Add finely chopped onion, 3 cloves of minced garlic and 2 oz of diced pancetta-which is a lean rolled Italian bacon. Cook and stir this until brown--about 10 mins or so.
- Now stir in the chicken broth and Italian herbs. Bring this to a boil.
- At this point add the tortellini. Simmer the soup uncovered until the tortellini is cooked-about 10-12 rains.
- Now stir in the crushed tomatoes-Heat thoroughly and then add your chopped fresh spinach leaves and salt & pepper to taste. Cook 10 mins.
