This is a good recipe to make when you want to make gifts. This is a huge batch, but when completed you have 12 very nice gifts. They are colorful and loaded with fruit. Enjoy

Ingredients
  • Large Batch Excellent Fruit Cakes
  • 6 cups brown sugar
  • 4 cups butter
  • 12 eggs
  • 1 cup buttermilk
  • 1 cup honey
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1-1/2 teaspoons cloves
  • 8 cups flour
  • 2 teaspoons baking soda in a little hot water
  • 17 pounds fruit
  • 7 quarts pecans

Directions
  1. Mix brown sugar, butter, eggs, buttermilk, honey, cinnamon, nutmeg, cloves and flour by hand.
  2. Add fruit and pecans.
  3. Spray 12 large loaf pans with nonstick cooking spray.
  4. Fill pans 2/3 full then cook in pans filled half full of water to prevent over cooking.
  5. Bake at 275 for 1 hour then allow to rest for 10 minutes before removing from pan to cool.
