thai sweet and sour shrimp soup with mushroom and coconut milk

Ingredients
  • 500 grams of shimp
  • 200 grams of mushroom
  • 10 cups of water
  • 3 tbs of tom yum paste
  • 5 shallot, sliced
  • 5 garlic, sliced
  • 1 tomato, quartered
  • juice of 2 lemon
  • 1 part of galangal, bruised
  • 6 kraffir lime leaf
  • 2 lemon grass, bruised
  • salt and pepper
  • 1 cup of coconut milk
  • fresh coriander

Directions
  1. bring water to the boil,cook tom yum paste with shallots, garlic, galangal, kraffir lime leaves, lemon grass, until boils
  2. add tomato, mushroom, lemon juice, coconut milk salt and pepper
  3. taste, if the saltiness and sourness is enough, add shrimp, when the shrimp turns red turn off the stove

If you can't find tom yum paste in your area may be you can make it your self by crushing; 2 lemon grass
6 kaffir lime leaves
1/2 cup of galangal
1 cup of shallots
juice from 1 lime
3 tbs fish sauce
1 tbs tamarind (pick out the seeds)
2 cups of chili peppers
into a very fine puree than stir fry in low-medium heat with 3 tbs of oil until very fragant and thickened, store in a small container you can refrigerate for few months


I tried to make this last night. but i added thai eggplants, bamboo and chicken. bamboo goes so well with this. i love this dish!
