How to make it
- Mix and cook cornbread according to package directions.
- Saute onion and bell pepper until tender.
- Crumble cornbread and add rotel, mexicorn, chicken broth, and cheese to onion and pepper mixture.
- Place in a greased baking dish.
- Bake at 350 degrees until firm.
