Pumpkin Chip Cookie Bars Recipe
A fall twist on Nestle Toll House cookie bars...you have to try these, but be careful - they are addictive. Vegans are us...but non-vegans won't even know that they aren't just rich cookie bars

Ingredients
  • 1 1/4 cups whole wheat or all-purpose flour
  • 1 TBSP Ener-G egg replacer (or 1 egg)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • dash ground cloves
  • pinch nutmeg
  • 1/2 cup vegan margarine, softened
  • 3/8 cup granulated sugar
  • 3/8 cup packed brown sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup canned pumpkin
  • 1 TBSP water (omit it using a real egg)
  • 1/3 cup semi-sweet vegan chocolate chips

Directions
  1. Preheat oven to 350F. Grease an 8x8 or 6x9 baking dish (use 9x13 if you double the recipe).
  2. Combine flour, egg replacer (dry), baking soda and salt and spices in small bowl.
  3. Beat margarine, both sugars and vanilla in large mixer bowl until fluffy.
  4. Add pumpkin and beat well – until fluffy again.
  5. Gradually beat flour mixture into butter mixture.
  6. Stir in chocolate chips
  7. Spread into prepared pan.
  8. Bake 20-25 minutes or until golden brown.
