Manicotti Marinara with Peppers

- 8 pcs manicotti, uncooked shopping list
- 2 T olive oil shopping list
- 2 c yellow and green pepper strips shopping list
- 1 c onion slices shopping list
- 2 cloves garlic, minced shopping list
- 1 c sliced zucchini shopping list
- 1 egg, slightly beaten shopping list
- 1 1/2 c. marinara sauce shopping list
- 1 t each dried basil and oregano leaves, divided shopping list
- 2 c (8 oz) mozzarella cheese, shredded and divided shopping list
- 1 3/4 c ricotta cheese shopping list
- 1/4 c grated parmesan cheese shopping list
How to make it
- Cook pasta according to package directions
- drain
- Lay flat on foil to cool
- In skillet, heat oil
- add peppers, onion and garlic
- Cook over medium-high heat until soft, about 5 minutes
- add zucchini, sauce, and one-half basil and oregano.
- Cook 3 minutes
- spread 1/2 c in 13 x 9 x 2 inch baking dish
- In bowl, stir together 1 c mozzarella, ricotta, egg, Parmesan cheese, remaining basil and oregano
- Fill pasta tubes with ricotta mixture
- place in dish
- Pour remaining sauce over pasta
- sprinkle with remaining mozzarella cheese
- Baket at 350 degrees for 25-j30 minutes
- Let stand 10 minutes
