Macadamia Crusted Chicken Breast With Blueberry Peach Butter Recipe
This is a recipe I obtained from a co-worker who had us over for cards last week. This is what she served and it was fantastic. Enjoy

Ingredients
  • 1/2 cup butter cut into pats
  • 1 tablespoon old bay seasoning
  • 2 tablespoons minced red onion
  • 1 teaspoons minced roasted garlic
  • 3 ounces soft brie cheese with herbs
  • 1/4 cup diced sharp cheddar cheese
  • 2 cups macadamia nuts crushed
  • 1 egg
  • 1 cup flour
  • 2 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup asiago cheese
  • 1 cup blueberry peach bagel butter

Directions
  1. Pound each chicken breast to 1/8" thickness then sprinkle with salt, pepper and old bay.
  2. In medium fry pan on low heat begin to melt a few pats of butter.
  3. Meanwhile mix the cheeses, onion, garlic and spices then mix well.
  4. Stuff each chicken breast with cheese mixture being careful not to overfill.
  5. Roll and close each chicken breast.
  6. You might want to secure the breasts with kitchen string or toothpicks
  7. Have egg wash ready (egg well mixed with a small amount of water) in one bowl.
  8. Place flour for dredging in another bowl.
  9. Put the first chicken breast in the flour then the egg wash and then the flour again.
  10. Melt butter in hot frying pan then roll chicken in crushed macadamia nuts and put in pan.
  11. Repeat for the second chicken breast.
  12. Fry chicken breasts long enough to be brown on both sides.
  13. Remove from heat and put in an ovenproof dish.
  14. Bake at 350 for 20 minutes then remove from baking dish and put on hot plate and keep warm.
  15. Garnish with blueberry peach butter.
