Ingredients
  • 6 egg yolks
  • 6 tbp granulated sugar
  • 6 tbsp sherry wine

Directions
  1. combine yolks, sugar in the upper part of a cold double boiler; beat with rotary beater until thick and lemon colored
  2. gradually beat in sherry
  3. Place over hot (not boiling) water and beat with a rotary beater until thick and fluffly (about 4-6 minutes
  4. remove from heat and serve immediately
