Chicken a la mexican

- 1 kg chicken, boneless shopping list
- 1/2 cup olives shopping list
- 1/2 cup vinegar shopping list
- 3/4 cup tomato ketchup shopping list
- 6 basil [tulsi] leaves shopping list
- 2 bay leaves shopping list
- 2 med. onions, chopped shopping list
- 1 cup boiled corn shopping list
- 2 capsicums, sliced shopping list
- 1 tsp. crushed garlic shopping list
- 1 tsp. red paprika shopping list
- 1/2 tsp. black pepper shopping list
- salt to taste shopping list
How to make it
- Cut chicken into bite sized pieces. Heat oil. Fry the chicken pieces to golden brown. remove and keep aside.
- To the remaining oil, add garlic and onions and fry till golden brown. add vinegar, tomato ketchup, seasonings and herbs. bring to a boil.
- Add the chicken pieces and corn.
- Cover and cook over low heat till the chicken is tender and the sauce is thick.
- Add the sliced capsicums and cook further for 5 to 7 minutes.
- Serve with steamed rice.
