A great old classic that i stole from mon plaisir in Covent garden in London about 8 years ago

Ingredients
  • 18 Eggs Whole
  • 1 Litre of Double Cream
  • 100 Mls of Passion Fruit Puree
  • 150 grams of Sugar

Directions
  1. Bring to the boil the cream, sugar and passion fruit
  2. Pour over the egg yolks
  3. pour into small ramekins and cook in a bain maire for 30 minutes
  4. once cooked, chill
  5. when you need to serve them, sprinkled with sugar and glaze with a torch
