How to make it

  • Bring to the boil the cream, sugar and passion fruit
  • Pour over the egg yolks
  • pour into small ramekins and cook in a bain maire for 30 minutes
  • once cooked, chill
  • when you need to serve them, sprinkled with sugar and glaze with a torch
