This is a great chicken salad that has a fruity and tangy base.

Ingredients
  • 5 c. diced cooked chicken
  • 3/4 c. cashews
  • 1 1/2 c. grapes (seedless and whole)
  • 1 1/2 c. pineapple, drained
  • Salt and Pepper to taste
  • 1/2 c. mayonnaise
  • 1T dijon mustard

Directions
  1. Combine chicken, cashews, grapes and pineapple
  2. Add salt and pepper to taste
  3. Mix well
  4. Combine mayo and mustard
  5. Blend into chicken mixture
  6. Chill and enjoy!
