When facing a diet of steady chicken breasts, a broiled salmon makes a great change of pace. Since I love citrus this marinade is a favorite.

Ingredients
  • 4 six ounce portions of one inch thick salmon fillets
  • 1/2 tsp of salt and 1/2 tsp of black pepper
  • 2 teaspoons of grated orange rind
  • equal portions of fresh rosemary leaves and fennel seeds
  • 1/2 cup of fresh orange juice
  • cooking spray

Directions
  1. Combine orange juice, orange rind and crushed rosemary leaves and fennel seeds.
  2. I use a mortar and pestle for the rosemary and fennel.
  3. Put fish and marinade in a large resealable plastic bag.
  4. Refrigerate 20 minutes. Turning at least once.
  5. Meanwhile preheat broiler.
  6. Remove fish from marinade, reserving the marinade.
  7. Place fish skin side down on a broiler pan well coated with non stick cooking spray.
  8. Season liberally with salt and pepper.
  9. Broil about 10 minutes.
  10. Bring reserved marinade to a boil in a small sauce pan, reduce heat and simmer while the salmon cooks.
  11. Serve the sauce with the finished salmon.
  12. I like peas with this dish especially the braised peas with lettuce and a mushroom rice pilaf.
