How to make it

  • Combine orange juice, orange rind and crushed rosemary leaves and fennel seeds.
  • I use a mortar and pestle for the rosemary and fennel.
  • Put fish and marinade in a large resealable plastic bag.
  • Refrigerate 20 minutes. Turning at least once.
  • Meanwhile preheat broiler.
  • Remove fish from marinade, reserving the marinade.
  • Place fish skin side down on a broiler pan well coated with non stick cooking spray.
  • Season liberally with salt and pepper.
  • Broil about 10 minutes.
  • Bring reserved marinade to a boil in a small sauce pan, reduce heat and simmer while the salmon cooks.
  • Serve the sauce with the finished salmon.
  • I like peas with this dish especially the braised peas with lettuce and a mushroom rice pilaf.
