Orange and Fennel Glazed Salmon

- 4 six ounce portions of one inch thick salmon fillets shopping list
- 1/2 tsp of salt and 1/2 tsp of black pepper shopping list
- 2 teaspoons of grated orange rind shopping list
- equal portions of fresh rosemary leaves and fennel seeds shopping list
- 1/2 cup of fresh orange juice shopping list
- cooking spray shopping list
How to make it
- Combine orange juice, orange rind and crushed rosemary leaves and fennel seeds.
- I use a mortar and pestle for the rosemary and fennel.
- Put fish and marinade in a large resealable plastic bag.
- Refrigerate 20 minutes. Turning at least once.
- Meanwhile preheat broiler.
- Remove fish from marinade, reserving the marinade.
- Place fish skin side down on a broiler pan well coated with non stick cooking spray.
- Season liberally with salt and pepper.
- Broil about 10 minutes.
- Bring reserved marinade to a boil in a small sauce pan, reduce heat and simmer while the salmon cooks.
- Serve the sauce with the finished salmon.
- I like peas with this dish especially the braised peas with lettuce and a mushroom rice pilaf.
