Ceviche

- 800g of white fish (sea bass, flounder, grouper, halibut, sole, etc). shopping list
- 1 red onion, sliced finely shopping list
- 1 ají limo (limo chili pepper) or any hot pepper that is available to you, seeded and chopped very fine shopping list
- juice of 10-12 limes shopping list
- salt shopping list
- Note: I also like to add 1 red or green bell pepper, sliced in thin rings. shopping list
How to make it
- Dice fish into 2cm pieces and mix with the sliced onion.
- Wash and drain well.
- Season with salt and the chili pepper.
- Toss fish preparation in lime juice and mix well.
- Let stand for 10 - 12 minutes (until the fish turns very white).
- Serve ceviche right away.
- To keep the authentic tone, serve with boiled sweet potato, a chunk of boiled corn and lettuce.
- I also like to have a plate of lavash or toasted pita tips with this fish.
- Makes 6 servings.

I am Peruvian and this happens to be my favorite dish! I use lemons when I make it. Other than that I follow your recipe just as it is. I garnish with a slice of sweet potato and a small ear of corn...thanks for posting it!!!
