Ingredients
  • 800g of white fish (sea bass, flounder, grouper, halibut, sole, etc).
  • 1 red onion, sliced finely
  • 1 ají limo (limo chili pepper) or any hot pepper that is available to you, seeded and chopped very fine
  • Juice of 10-12 limes
  • Salt
  • Note: I also like to add 1 red or green bell pepper, sliced in thin rings.

Directions
  1. Dice fish into 2cm pieces and mix with the sliced onion.
  2. Wash and drain well.
  3. Season with salt and the chili pepper.
  4. Toss fish preparation in lime juice and mix well.
  5. Let stand for 10 - 12 minutes (until the fish turns very white).
  6. Serve ceviche right away.
  7. To keep the authentic tone, serve with boiled sweet potato, a chunk of boiled corn and lettuce.
  8. I also like to have a plate of lavash or toasted pita tips with this fish.
  9. Makes 6 servings.

I am Peruvian and this happens to be my favorite dish! I use lemons when I make it. Other than that I follow your recipe just as it is. I garnish with a slice of sweet potato and a small ear of corn...thanks for posting it!!!
