Low Fat Moussaka

- 1 lb. groud turkey shopping list
- 1 large onion, diced shopping list
- 2 large eggplant, peeled and cubed shopping list
- 16 oz. can diced tomatoes, drained shopping list
- 16 oz. package fresh mushrooms, sliced shopping list
- 1/2 c. fresh parsley shopping list
- 4 cloves garlic, minced shopping list
- 1 T dried oregano shopping list
- 1 T dried rosemary shopping list
- 1 T cinnamon shopping list
- 3 eggs shopping list
- 8 oz. package fat-free cream cheese shopping list
- 1 c. fat-free plain yogurt shopping list
- 1/4 t. nutmeg shopping list
- salt and pepper (to taste) shopping list
How to make it
- Preheat oven to 350 degrees.
- Prepare mixture one:
- Brown turkey with onion in a soup pot.
- Add eggplant, tomatoes, mushrooms, parsley, garlic, oregano, rosemary, cinnamon, salt and pepper.
- Cook until eggplant is tender (about 20 minutes).
- Prepare mixture two:
- Blend together the eggs, cream cheese, yogurt, nutmeg, and 1/2 t. of salt until smooth.
- Prepare casserole:
- Place mixture one in a large casserole dish.
- Layer mixture two onto mixture one.
- Sprinkle top with cinnamon.
- Bake in oven for 15-20 minutes until top is set.
