Low Fat Moussaka Recipe
This recipes pares off many of the calories found in the traditional recipe for Moussaka. Some might miss the rich Bechamel sauce, but this will get your Greek fix taken care of without making your waist line bigger.

Ingredients
  • 1 lb. groud turkey
  • 1 large onion, diced
  • 2 large eggplant, peeled and cubed
  • 16 oz. can diced tomatoes, drained
  • 16 oz. package fresh mushrooms, sliced
  • 1/2 c. fresh parsley
  • 4 cloves garlic, minced
  • 1 T dried oregano
  • 1 T dried rosemary
  • 1 T cinnamon
  • 3 eggs
  • 8 oz. package fat-free cream cheese
  • 1 c. fat-free plain yogurt
  • 1/4 t. nutmeg
  • salt and pepper (to taste)

Directions
  1. Preheat oven to 350 degrees.
  2. Prepare mixture one:
  3. Brown turkey with onion in a soup pot.
  4. Add eggplant, tomatoes, mushrooms, parsley, garlic, oregano, rosemary, cinnamon, salt and pepper.
  5. Cook until eggplant is tender (about 20 minutes).
  6. Prepare mixture two:
  7. Blend together the eggs, cream cheese, yogurt, nutmeg, and 1/2 t. of salt until smooth.
  8. Prepare casserole:
  9. Place mixture one in a large casserole dish.
  10. Layer mixture two onto mixture one.
  11. Sprinkle top with cinnamon.
  12. Bake in oven for 15-20 minutes until top is set.
