How to make it

  • Preheat oven to 350 degrees.
  • Prepare mixture one:
  • Brown turkey with onion in a soup pot.
  • Add eggplant, tomatoes, mushrooms, parsley, garlic, oregano, rosemary, cinnamon, salt and pepper.
  • Cook until eggplant is tender (about 20 minutes).
  • Prepare mixture two:
  • Blend together the eggs, cream cheese, yogurt, nutmeg, and 1/2 t. of salt until smooth.
  • Prepare casserole:
  • Place mixture one in a large casserole dish.
  • Layer mixture two onto mixture one.
  • Sprinkle top with cinnamon.
  • Bake in oven for 15-20 minutes until top is set.
