Your Way Cheese Tortellini Spinach Soup

- Serves 6
Made this quickly first time with no recipe...just added everything "by ear" :) Have made it many, many times since, so here goes....do it YOUR WAY! This will get you on the cookin' road! :)
Ingredients
- 1 refrigerated package cheese tortellini shopping list
- 1 box chicken broth (lower sodium) shopping list
- 1 cup water shopping list
- 1 can Petite diced tomatoes shopping list
- Handful of fresh spinach, more or less shopping list
- 1/2 cup chopped onions or 3/4 cup PictSweet seasoning Blend (packaged chopped onions, red, green peppers in frozen food section) shopping list
- 2 tablespoons olive oil shopping list
- 1/2 teaspoon oregano, more or less shopping list
- 1 tablespoon basil, more or less shopping list
- parsley sprig or dried parsley shopping list
- 1 bay leaf shopping list
- garlic to taste shopping list
- black pepper to taste shopping list
- white pepper to taste shopping list
- Home made croutons shopping list
- parmesan cheese shopping list
How to make it
- In pan, saute onions or PicSweet Seasoning Blend in olive oil
- Add chicken broth
- Add canned tomatoes
- Add 1 cup water
- Add oregano, garlic, basil, black pepper, white pepper
- Add parsley
- Add bay leaf
- Cook, simmering for about 30 minutes
- Add fresh spinach ( I *roll* (cigar-style) a generous handful, then chop into 1/2 inch sections
- Last, add the Cheese Tortellini, cooking time as directed on package
- Ladle into soup bowl
- Top with croutons and Parmesan Cheese
- Mighty Delicious!
