Rice Caliente Supreme Casserole Recipe
Old recipe. A favorite spicy mixture of ground beef, rice, Ro-tel, sour cream, cheese....baked until it is browned and a little crusty! Serve with chips, and guac!

Ingredients
  • 2 cups *cooked* long grain rice
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 2 garlic cloves minced (if in a hurry, can use garlic powder)
  • 3/4 teaspoon ground cumin, or to taste
  • Salt, pepper to taste
  • 2 cups sour cream
  • 1 can Ro-tel tomatoes and chilies
  • 1-1/2 cups grated Monterey Jack Cheese
  • 1 cup grated Mild Cheddar Cheese
  • NOTE: May use lean pork sausage or cooked chicken instead of ground beef

Directions
  1. In skillet, cook ground beef, onion, garlic, cumin, salt, pepper
  2. Drain off any fat
  3. In large bowl, combine rice, sour cream, Ro-tel
  4. Add cooked ground beef , mix gently
  5. Stir in the Monterey Jack Cheese
  6. Spoon into large casserole dish
  7. Top with mild Cheddar Cheese
  8. Bake in 350 degree oven until bubbly
