Curried Chicken Salad With Marionberries

- 1 pound boneless skinless chicken breasts shopping list
- 1 tablespoon olive oil shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/3 cup mayonnaise shopping list
- 1 tablespoon dry white wine shopping list
- 2 tablespoons mango chutney shopping list
- 1/2 tablespoon curry powder shopping list
- 1/4 tablespoon lemon juice shopping list
- 1/4 teaspoon ground ginger shopping list
- 1 green onion chopped shopping list
- 1 celery stalk chopped shopping list
- 1/4 cup raisins shopping list
- 2 cups fresh or frozen marionberries shopping list
- 1/2 cup roasted salted cashews shopping list
How to make it
- Heat olive oil in nonstick cooking pan.
- Add chicken breasts and sauté for 5 minutes.
- Turn over and sauté 5 more minutes.
- Season with salt and pepper.
- Remove from pan and cool in refrigerator 30.
- Cut meat into 1/2" cubes.
- Combine mayonnaise, wine, chutney, curry powder, lemon juice and ginger.
- Add chicken, onions, celery, raisins and marionberries then toss to coat.
- Season with salt and pepper.
- If using frozen berries allow to sit in refrigerator for 1/2 hour before serving.
- Immediately before serving add cashews.
- Serve on a bed of lettuce or in pocket bread.
