Open Face Egg And Cheese Muffin Recipe
This is an occasional favorite breakfast for us. We discovered how to successfully poach eggs in our food steamer using ramekins that are perfectly round. It turns out these perfectly round poached eggs top English muffins wonderfully.

Ingredients
  • 2 tsp margarine
  • 1 English muffin
  • 2 eggs, poached
  • 2 slices bacon, cooked (sometimes we use Canadian bacon instead)
  • 2 slices American cheese (we use Kraft Deli Deluxe Sharp, it's more expensive but I don't much care for any other kind of American cheese)

Directions
  1. Cut the English muffin in half and spread each with about 1 tsp of margarine.
  2. Add 1 poached egg to each half, top with 1 slice of bacon and 1 slice of cheese.
  3. Broil each muffin until cheese is melted, about 2 or 3 minutes in our toaster oven.

To cook eggs I butter a small bowl scamble an egg in it and put in micowave 30sec-1min 30 sec. flip onto english muffin or bagel fits perfect.


That sounds good, but we don't have a microwave so we're happy for the food steamer.

We have a set of ramekins from Pier 1 that are the perfect size for English Muffins.
