Ingredients
  • 1 cup chicken broth
  • 1 cup minute rice, uncooked
  • 2 eggs
  • 12 oz crabmeat
  • 1/4 cup grated parmesan cheese
  • 1/4 stick butter or margarine

Directions
  1. Bring broth to boil in a small saucepan. Stir in rice; cover. Remove from heat; let stand 5 minutes. Fluff with a fork.
  2. Beat eggs lightly in a medium bowl. Add rice, crabmeat and cheese; mix well. shape into 8 patties.
  3. Melt butter in large skillet on medium heat. Add patties; cook 5 minutes on each side or until golden brown.
