Cheesy Mexican Eggplant

- 2 eggplants(21/2 bs)cut in 1/2' thick rounds shopping list
- nonstick spray shopping list
- 1/2t.gr.black pepper shopping list
- 2c marinara sauce shopping list
- 1 bottle(8 oz.) taco sauce shopping list
- 1/2t. gr. cumin shopping list
- 1 pkg.(8 oz) shreaded Mexican blend cheese(2c) shopping list
- 1/3c cilantro,chopped shopping list
- 11/2c white rice shopping list
How to make it
- You'll need a broiler pan with rack and a shallow 3qt. baking dish. Heat broiler
- Place 1/2 eggplant on broiler rac,evenly coat with nonstick spray,then sprinkle with half the pepper. Broil 4" from heat 4 to 8 mins. per side until lightly browned and tender. Repeat with remaining eggplant and pepper.
- Heat oven to 350. In medium bowl,stir marinara and taco sauce with cumin
- Spread 1/2 c. sauce in baking dish. Line with half the eggplant. Spoon on 11/4 c cilantro. Repeat layering with remaining eggplant,sauce and cheese;cover with foil
- Bake 40 miins. or until bubbly. Meanwhile,make rice as pkg. directs.
- Let eggplant rest 10 mins. Sprinkle top with remaining cilanto.
- Serve with rice.
