Wild Rice Casserole Recipe
This is a side dish to add to your wild meat or beef dish. Everyone loves it!

Ingredients
  • 2 Cups of Wild Rice
  • 1 Can 28 oz. stewed tomatoes diced
  • brick of yellow cheese (approximate 3 cups) grated
  • 4 stalks of celery chopped finely
  • 1 large onion cut into small pieces
  • 1 T of butter

Directions
  1. Follow directions of cooking wild rice or boil hard your rice in 2 cups of water. When the rice starts to open up slightly - drain water and put rice aside;
  2. Cook onion and celery together in butter for 5 minutes - put aside
  3. Mix together in a large bowl Rice, tomatoes, celery and onions
  4. Add 2 Cups of cheese and mix again
  5. Place into a baking dish and put a layer of cheese on the top.
  6. Bake at 350 for 40 to 45 minutes covered. Serve

This has always been one of my favorite dishes to accompany a nice beef tenderloin. My mother used to make it with cubed Velveeta, but I prefer to use cubed sharp cheddar. Instead of celery, she added a jar of canned (drained) mushrooms. I love the texture of this dish.
