Cheezy Potato Cakes

- 550 grams boiled, mashed potatoes (1 pound) shopping list
- 130 grams flour (5 oz) shopping list
- 6 tablespoons melted butter shopping list
- 1 teaspoon salt shopping list
- 8 oz cheese (230 grams) shopping list
- 4 well beaten eggs shopping list
How to make it
- Mash the potatoes while still warm and add butter and salt.
- Add in enough flour to make it a pliable dough, without making it too dry.
- The type of potato will effect this.
- Add cheese and two well beaten eggs.
- Mix well.
- Make into small round cakes.
- Dip in breadcrumbs or flour.
- Fry until golden brown on each side.
- You can add finely chopped mushrooms or bacon in mixture.
