Big Mamas Date Nut Cherry Loaf

- 1 pound dates, chopped shopping list
- 1 cup candied red cherries shopping list
- 4 cups pecan halves shopping list
- 1 cup flour shopping list
- 1 cup sugar shopping list
- 4 eggs, separated shopping list
- 1 teaspoon vanilla shopping list
- 1/2 teaspoon salt shopping list
How to make it
- In large bowl, mix dry ingredients with dates, pecans, and cherries, coating well
- In large mixer bowl, beat egg whites until stiff
- In another bowl, whisk egg yolks well
- Add egg yolks to stiffly beaten egg whites
- Beat the combined yolks and egg whites until mixed well
- Add to fruit-nut mixture
- *Mix* thoroughly ( usually with wooden spoon)
- Pour into greased and floured tube pan (large angel food pan)
- Bake in 325 degree oven for 1-1/2 hours, maybe a little longer
- A small pan of water in the oven keeps cake from drying out
- When ready to serve, slice thin
