Big Mamas Date Nut Cherry Loaf Recipe
Very old recipe. Very little batter. It keeps two months if wrapped. Can be wrapped in cheesecloth with grape juice or light wine, then wrapped in aluminum foil and allowed to season. Can be baked in small loaf pans for Christmas giving.

Ingredients
  • 1 pound dates, chopped
  • 1 cup candied red cherries
  • 4 cups pecan halves
  • 1 cup flour
  • 1 cup sugar
  • 4 eggs, separated
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Directions
  1. In large bowl, mix dry ingredients with dates, pecans, and cherries, coating well
  2. In large mixer bowl, beat egg whites until stiff
  3. In another bowl, whisk egg yolks well
  4. Add egg yolks to stiffly beaten egg whites
  5. Beat the combined yolks and egg whites until mixed well
  6. Add to fruit-nut mixture
  7. *Mix* thoroughly ( usually with wooden spoon)
  8. Pour into greased and floured tube pan (large angel food pan)
  9. Bake in 325 degree oven for 1-1/2 hours, maybe a little longer
  10. A small pan of water in the oven keeps cake from drying out
  11. When ready to serve, slice thin
