How to make it

  • In large bowl, mix dry ingredients with dates, pecans, and cherries, coating well
  • In large mixer bowl, beat egg whites until stiff
  • In another bowl, whisk egg yolks well
  • Add egg yolks to stiffly beaten egg whites
  • Beat the combined yolks and egg whites until mixed well
  • Add to fruit-nut mixture
  • *Mix* thoroughly ( usually with wooden spoon)
  • Pour into greased and floured tube pan (large angel food pan)
  • Bake in 325 degree oven for 1-1/2 hours, maybe a little longer
  • A small pan of water in the oven keeps cake from drying out
  • When ready to serve, slice thin
