Ingredients
  • 675 g baking potatoes
  • • 1 large onion
  • • olive oil
  • • 225 g porridge oats
  • • 225 g laver bread ( purchased boiled for 5 hours)
  • • potato flour, for rolling
  • • salt and pepper

Directions
  1. peel and dice potatoes coarsely and boil them in salted water for 20 minutes.
  2. Finely chop the onions and brown them in olive oil.
  3. Season the porridge oats.
  4. Mash the potatoes and add the onions and cooked laver bread. Then allow to cool.
  5. Shape the potato mixture into cakes and roll in the seasoned porridge oats.
  6. Shallow fry the Swansea Jacks until brown
