Jelly Belly Cookies

- 1 3/4 cups all-purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- 3/4 cup unsalted butter (1 1/2 sticks) Room Temperature/softened shopping list
- 1 large egg shopping list
- 1/3 cup sugar shopping list
- 1 teaspoon pure vanilla extract shopping list
- 1/3 cup of any jam or fruit preserves (raspberry, cherry, strawberry, peach) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Line cookie sheet with parchment paper.
- Whisk the dry ingredients (flour, baking powder, salt).
- Whip butter and sugar with a hand-held mixer until fluffy (about 4 minutes).
- Beat in egg and vanilla.
- Slowly beat in the dry ingredients (in two additions).
- When the dough gets formed, scoop the dough into a ball (about 1 inch) and place them about two inches apart on the baking sheets.
- Press a thumbprint into the center of each ball, about one half inch deep.
- Fill each indentation with jelly or fruit preserves.
- Bake cookies about 15 minutes or until the edges are golden.
- Cool cookies on the baking sheets.
- **dust some powdered sugar on top, you can also roll the dough balls with colored sugars (red & green) before pressing thumbprint into the ball to make it look more festive
